Gluten Free Diet Plans have become mainstream as individuals realize they have a sensitivity to gluten, have MTHFR gene defects or have celiac disease. According to the Los Angeles Times, ” Gluten is a protein that is found in certain grains, including wheat, barley and rye and triticale (a cross between wheat and rye).”
There are many reasons people avoid gluten. Individuals that have the MTHFR genetic defect a1298c or c677t may have a problem processing the folate in the gluten.
